Today I am celebrating, it's two years since I'm in Japan! Incredible but true, time flies and it seems it was yesterday I got to Tokyo with my suitcase filled with hopes but more lost than being in a jungle . Hence, this post has to be special and I thought on dedicating it to one of the most gastronomic pleasures, sushi! After two years I've had the opportunity to deepen and to experiment japanese cuisine, surprisingly rich and varied, before coming to Japan I'd have never thought that it could be so extensive, nonetheless after all this time when people ask me "what is your favourite dish?"...I have no doubts to reckon I'm a big fan of the topic of the topics...sushi! Provided it is with quality and in specialized restaurants of course, because sushi is something that at first glance looks simple but actually has a complexity and history behind that few can compare with. The basic ingredients are clear, rice and fish, but beyond this there is a mix of combinations and preparations that give an endless world of flavours and sensations! To me, sushi is a great example of important Japanese values, minimalism, natural, balance, perfectionism...to have the opportunity to see a sushi master (it takes years and years to become one) working, is a great entertainment for your senses. Since I'm Japan I've been to several sushi restaurants, some simpler other more expensive, in general however it is unlikely you feel disappointed. Just getting into a good restaurant, you are surrounded by an atmosphere that goes beyond the primary role of restaurants, it is food transformed to art! Amongst them, there is one particularly in Ebisu, Sushi Matsue, to which I have been bond since long time ago and became one of my favourites (and of many of my visitors in Japan as well :)). I first visited it by chance when I came on holidays to Japan and it turned out to be a key element, or better a sign of life, that brought me finally to Japan. Therefore, in this special day here some pics of the yummy sushi treats...mmm!

Nievitas no te confundas! el que tomamos estaba un poco rancio, es verdad...pero el maki de Uni es de los mejores placeres que hay!! o sea que tenés otra buena excusa para volver!! Empiecen a organizar viaje con la enana :)
